Chef Daniel Campos: Ceviche

As I don’t know how to cook, I challenge chefs to cook with me in the hopes of becoming better at this art!


Daniel Campos, a professional Peruvian chef made us the perfect ceviche & now you can try his secret recipe at home!

Ingredients:

Fish - Dourada | Chocolo Corn | Canchita Corn | Red onion | Sweet potato | Garlic | Ginger | Cilantro | Lime | Sugar | Pepper | Salt | Different Chilli peppers - Ají Limo or Ají Amarillo


Steps:

1. Cut & Prepare the Fish


2. Boil the Sweet Potato, corn & chilies

* Peel and boil the sweet potatoes until tender.

* Boil the corn with a bit of sugar to enhance its sweetness.

* Cut, clean, and boil the chillies to soften them.


3. Make the Leche de Tigre

* Blend the boiled chillies into a smooth paste.

* Squeeze fresh lime juice into the blender.

* Add garlic, ginger, a small amount of the sliced red onion, salt, and pepper.

* Incorporate a little of the chilli paste to your taste.

* Blend everything together until smooth.

* Strain the mixture to remove any solids, leaving you with a smooth leche de tigre.


4. Fry the Canchita


5. Assemble the Ceviche: In a large bowl, mix the fish with the leche de tigre. Add the chilled red onion slices and a bit of cilantro, mixing gently to coat everything.


6. Plate it


And voilà, your ceviche is ready!
